Ingredients

  • 2 teaspoons oil from sun-dried tomatoes jar

Sauce

  • 1 tablespoon oil from sun-dried tomatoes jar
  • 2 teaspoons Italian seasoning
  • 1 cup vegetable stock
  • 1 cup heavy cream
  • 1/2 cup shaved Parmesan cheese
  • Kosher salt, to taste
  • Fresh cracked pepper, to taste
  • 2 tablespoons fresh chopped parsley

Pasta

  • 16 oz. linguine, cooked according to package directions until al dente

Garnish (optional)

  • Additional julienne sun-dried tomatoes
  • Additional Parmesan cheese
  • Additional chopped parsley


Instructions

  1. Process Tomatoes + Garlic: Add the sun-dried tomatoes, garlic cloves, and 2 teaspoons of sun-dried tomato oil into a food processor. Pulse until the mixture is well minced and combined into a paste.
  2. Sauté Tomatoes + Garlic: Heat 1 tablespoon of sun-dried tomato oil in a large sauté pan over medium heat. Add the minced sun-dried tomato and garlic mixture to the pan. Cook for about 1 minute, stirring frequently to release the aromas.
  3. Start the Sauce: Stir in 2 teaspoons of Italian seasoning and 1 cup of vegetable stock into the pan. Season with kosher salt and fresh cracked pepper to taste. Let the sauce simmer gently for 5 minutes to marry the flavors and slightly reduce.
  4. Make It Creamy: Remove the pan from heat and stir in 1 cup of heavy cream and 1/2 cup of shaved Parmesan cheese. Stir until the Parmesan melts completely and the sauce turns creamy and smooth.
