Instructions
- Preheat and Prepare: Preheat your oven to 350 degrees Fahrenheit. Lightly spray the bottom of a 9×13-inch baking dish with nonstick cooking spray and set aside to prevent sticking.
- Make the Sauce Base: In a large skillet over medium heat, melt the butter. Add the chopped onion and cook until tender, about 5 minutes, stirring occasionally. - Assemble the Enchiladas: Lay a flour tortilla flat on a clean surface. Evenly distribute some of the chicken and cheese mixture onto the tortilla. Roll the tortilla tightly and place it seam-side down in the prepared baking dish. Repeat with the remaining tortillas and filling.
- Add Sauce and Cheese Topping: Pour the remaining sauce evenly over the rolled enchiladas. Sprinkle the remaining ½ cup of shredded Monterey Jack cheese on top for a melty, golden crust.
- Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Carefully remove the foil and bake for an additional 5 minutes until the cheese is melted, bubbly, and slightly golden.
