Description

This vegan lavender buttercream is a delicately scented, creamy frosting perfect for cakes and cupcakes. Made with dairy-free butter and infused with culinary lavender, it provides a floral twist on traditional buttercream, ideal for adding a unique, elegant flavor to your vegan desserts.

Ingredients

Lavender Infusion

  • 1 tablespoon dried culinary lavender
  • 2 tablespoons dairy free milk

Buttercream

  • 125 grams dairy free butter
  • ½ teaspoon vanilla extract
  • 3-4 cups icing sugar
  • Pinch salt (to taste)
  • Gel food colouring (optional)

Instructions

  1. Infuse Lavender: Mix the dried culinary lavender with the dairy free milk and leave the mixture to infuse in the fridge for at least 2 hours or overnight. Once infused, strain out and discard the lavender, retaining the infused milk for the buttercream.
  2. Beat Butter and Vanilla: Using a hand mixer or a stand mixer with a paddle attachment, beat the dairy-free butter and vanilla extract together for 1-2 minutes until smooth and creamy.
  3. Add Icing Sugar and Mix: Add 2 cups of icing sugar to the butter mixture and beat on medium speed until combined. Add an additional cup of icing sugar and continue mixing. As the frosting thickens, gradually add the lavender-infused dairy free milk a little at a time to achieve a thick, creamy consistency.
  4. Adjust Consistency and Flavor: If the buttercream is too thin or has a strong buttery taste, add an extra ½ to 1 cup of icing sugar. If it becomes too thick, add more infused milk a little at a time. Add a pinch of salt to taste, and if desired, add a few drops of gel food colouring. Continue mixing until the buttercream is super creamy.
  5. Storage and Use: Store the completed frosting covered in the refrigerator until ready to use, or pipe it directly onto cupcakes or cakes as a finishing touch.

Notes

  • For best flavor, infuse the lavender in the milk overnight if possible.
  • Use culinary grade dried lavender to avoid any bitterness or unpleasant flavors.
  • Adjust the amount of icing sugar based on your preferred sweetness and frosting thickness.
  • Gel food colouring is optional but adds a vibrant touch without thinning the frosting.
  • Keep the frosting chilled if not using immediately to maintain the right texture.
