Ingredients

Chickpea Mixture

  • 1 can chickpeas, rinsed and drained
  • 3 garlic cloves, minced
  • 2 tbsp fresh mint, chopped (divided)
  • 4 tbsp parsley, chopped (divided)
  • ½ tsp chili powder
  • 1 ½ tbsp olive oil
  • ½ lemon, juice of
  • 2 tbsp sesame seeds, toasted

Wrap Ingredients

  • ½ avocado
  • 3 small flour tortillas
  • 2 tbsp chopped pitted olives


Instructions

  1. Prepare Chickpea Blend: Place half of the rinsed chickpeas, minced garlic, half of the chopped mint, half of the chopped parsley, chili powder, olive oil, toasted sesame seeds, and lemon juice into a blender or food processor. Blend until smooth but still slightly chunky.
  2. Mash Remaining Chickpeas: Transfer the blended chickpea mixture to a bowl and add the remaining chickpeas. Use a fork or potato masher to mash everything together, keeping some chickpeas whole for texture.
  3. Assemble Wraps: Lay out the small tortillas on a flat surface. Divide the chickpea mixture evenly, spreading about one-third down the center of each tortilla. Top with the remaining mint and parsley, chopped olives, and sliced avocado.
  4. Wrap and Toast: Fold the sides of the tortilla over the filling and roll up tightly like a burrito. Heat a skillet or frying pan over medium heat and toast each wrap on both sides until golden and sealed, approximately 2-3 minutes per side.
  5. Serve: Slice each wrap in half, serve immediately, and enjoy your healthy, flavorful vegan meal.
