Ingredients

Dipping Sauce

  • 1 cup (232 g) mayonnaise
  • 1 Roma tomato, chopped

Tomato Fritters

  • 6-7 Roma tomatoes, diced (about 3 cups)
  • 1 cup (125 g) all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 tablespoon garlic, minced
  • ½ cup (122.5 g) whole milk, room temperature
  • 2 large eggs, room temperature
  • ⅓ cup (33 g) chopped green onions
  • 1 medium jalapeño pepper, seeded, diced
  • 1 small red onion, finely diced (about ½ cup)
  • ½ cup (56.5 g) mild cheddar cheese, shredded
  • vegetable oil, for frying

Instructions

  1. Prepare the Dipping Sauce: In a food processor or using an immersion blender, blend the mayonnaise and chopped Roma tomato together until smooth and creamy. Transfer to the refrigerator and chill until ready to serve.
  2. Mix Fritter Batter: In a large bowl, combine diced tomatoes, all-purpose flour, baking powder, kosher salt, black pepper, minced garlic, whole milk, eggs, chopped green onions, diced jalapeño, finely diced red onion, and shredded cheddar cheese. Stir the mixture thoroughly until all ingredients are well incorporated into a thick batter.
  3. Heat Oil for Frying: Place a large skillet over medium heat and pour in about ½ inch of vegetable oil. Allow the oil to heat until it’s hot enough for frying, approximately 350°F (175°C).
  4. Form and Fry Fritters: Using a 3-tablespoon scoop, carefully drop batter into the hot oil, frying 3 to 4 fritters at a time without overcrowding the pan. Flatten the tops with a spatula to form roughly 3-inch wide patties.
  5. Cook Until Golden: Fry each side for 3 to 4 minutes until golden brown and crispy. Carefully flip the fritters to ensure even cooking on both sides.
