Chicken and Seasonings

Instructions

  1. Sauté the Aromatics: Heat the oil in a large frying pan or Dutch oven over medium-high heat until hot. Add the diced onion and sauté for about 5 minutes until softened. Add the minced garlic and cook for an additional minute. Remove from heat.
  2. Prepare the Sauce: In a blender or food processor, combine the crushed tomatoes, chipotle peppers, salt, cumin, black pepper, dried oregano, ground paprika, and the sautéed onion and garlic. Blend until the sauce is smooth.
  3. Simmer the Chicken: Pour the blended sauce back into the pan and heat over medium-high until it begins to simmer. Add the chicken breasts to the sauce, cover with a lid slightly ajar, and reduce the heat to maintain a gentle simmer. Cook for 45-50 minutes, turning the chicken breasts halfway through to ensure even cooking and prevent burning on the bottom.
  4. Shred the Chicken: Once the chicken is fully cooked and tender, remove it from the sauce and place it on a work surface. Using two forks, shred the chicken into bite-sized pieces.
  5. Finish Cooking: Return the shredded chicken to the simmering sauce and cook for an additional 10-15 minutes to allow the flavors to meld and the chicken to absorb the sauce.
