This Thai Curry Pizza combines the creamy, spicy flavors of yellow Thai curry with fresh vegetables and melted mozzarella cheese, baked on a crispy artisan pizza crust for a delightful fusion meal.


Ingredients

Sauce

  • ¼ cup coconut milk
  • 1 tablespoon yellow Thai curry paste

Pizza

  • ¼ batch Artisan Pizza Dough (or 1 – 11 inch pizza crust)
  • ½ cup red bell peppers, thinly sliced (½ pepper)
  • ½ cup carrots, cut into thin ribbons
  • 2 tablespoons red onion, thinly sliced
  • 1½ cups mozzarella, shredded

Garnish

  • Cilantro for garnish
  • Green onions for garnish


Instructions

  1. Preheat Oven: Preheat your oven to 475 °F (246 °C) and place a pizza stone on the center rack if using one, to ensure a crisp crust.
  2. Prepare Sauce: In a small bowl, whisk together the coconut milk and yellow Thai curry paste until the mixture is smooth and well combined, creating a flavorful curry sauce base for the pizza.
  3. Assemble Pizza: Roll out the artisan pizza dough on a floured baking sheet or on parchment paper if you plan to use the pizza stone. Spread the prepared curry sauce evenly over the dough, then layer the thinly sliced red bell peppers, carrot ribbons, and red onion slices on top. Finally, sprinkle the shredded mozzarella cheese evenly over the vegetables.
  4. Bake Pizza: Carefully transfer the pizza onto the stone or place the baking sheet in the oven. Bake for 9-11 minutes, or until the crust turns lightly browned and the cheese has melted and developed a golden color.
  5. Cool and Garnish: Remove the pizza from the oven and set it on a wire rack to cool slightly for a couple of minutes, allowing the crust to firm up. Then, slice the pizza and garnish with chopped green onions and fresh cilantro for a burst of fresh flavor.
