A moist and flavorful Sweet Potato Cinnamon Bread featuring warm spices like cinnamon and nutmeg, perfect for a cozy breakfast or snack. This bread combines mashed sweet potatoes with a sweet cinnamon sugar topping for a delightful texture and taste.
Ingredients
Batter
- 1½ cups sweet potatoes, mashed
- ½ cup butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
Topping
- ¼ cup granulated sugar
- 1 teaspoon cinnamon
Instructions
- Preheat and Prepare Pan: Preheat the oven to 350°F (175°C) and grease a 9.25 x 5.25 inch loaf pan. Alternatively, line the pan with parchment paper for easier bread removal after baking.
- Cream Butter and Sugar: In a large bowl or mixer bowl, cream together the softened butter and 1 cup sugar until the mixture is light and fluffy, about 2-3 minutes.
- Add Eggs and Flavorings: Add the eggs one at a time to the butter mixture, mixing on low speed after each addition. Then add the vanilla extract and mashed sweet potatoes, mixing until combined.
- Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, salt, ground cinnamon, and ground nutmeg to evenly distribute the leavening and spices.
- Combine Wet and Dry: Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined to avoid overmixing which can toughen the bread.
- Prepare Topping and Bake: Pour the batter into the prepared loaf pan. In a small bowl, mix ¼ cup granulated sugar with 1 teaspoon cinnamon and sprinkle evenly over the batter’s surface.
- Bake Bread: Bake in the center rack of the oven for 55–65 minutes or until a toothpick inserted into the center comes out clean and the top is golden brown.
- Cool and Serve: Remove the loaf from the oven and place it on a cooling rack. Allow it to cool for at least 15 minutes before carefully removing from the pan, slicing, and serving.
- Storage: Store leftover bread in a large ziplock bag in the refrigerator for up to 5 days to maintain freshness.
Notes
- For easier removal from the pan, lining with parchment paper is highly recommended.
- Do not overmix the batter once the flour is added to keep the bread tender.
- Check the bread starting at 55 minutes to avoid overbaking.
- Leftover bread can be toasted for a warm, crispy snack.
- This bread pairs well with butter, cream cheese, or a drizzle of honey.
