  • 4-5 tablespoons fresh cilantro (coriander), finely chopped
  • 2½ teaspoons cajun spice mix (or chipotle/jerk seasoning)
  • 2½ teaspoons tomato puree
  • 1 teaspoon miso paste (optional, but strongly recommended)
  • ¼ teaspoon cayenne pepper (optional)
  • 2½ tablespoons olive oil, divided
  • Fine sea salt and black pepper, to taste
  • 4 burger buns of your choice


Instructions

  1. Prepare the Sweet Potato: Peel and cube the sweet potato into bite-sized pieces to ensure even cooking.
  2. Cook Sweet Potato: Heat about ½ tablespoon of olive oil in a large non-stick pan over medium heat. Add the sweet potato cubes and sprinkle with the cajun spice mix. Stir occasionally and cook for 10-12 minutes until the sweet potato is browned and tender but still slightly al dente—meaning it retains a slight firmness and crunch. Remove from heat and let it cool slightly.
  3. Blend the Burger Mixture: In a blender, combine the cooked sweet potato (still slightly warm), drained chickpeas, grated garlic, chopped scallions, cilantro, tomato puree mixed with miso paste (if using), cayenne pepper (if desired), salt, and pepper. Pulse the mixture gently until it starts to come together, but with some small vegetable pieces still visible. Avoid over-blending to maintain texture.
  4. Form the Burgers: Shape the blended mixture into 4 even-sized patties. Press the mixture firmly to ensure the burgers hold together well during cooking.
  5. Fry the Burgers: Heat 1 tablespoon of olive oil in a large pan over medium heat. Cook the patties for approximately 2 minutes on each side until lightly browned and crispy. Add more oil as needed after flipping to prevent sticking and promote even browning.
  6. Serve: Immediately serve the burgers in your favorite buns with your preferred toppings and condiments.
