Ingredients
For the Chicken Marinade
- 3/4 cup light coconut milk, divided
- 1/2 cup sweet chili sauce, plus more for dipping
- 1 lime (juice of 1/2 lime for marinade, juice of remaining 1/2 for cauliflower rice)
- Salt and pepper, to taste
- 4 chicken breasts (~2 lbs)
For the Cauliflower Rice
- 8 cups cauliflower rice, fresh or frozen
- 1-1/2 tablespoons coconut oil
- 1/4 cup fresh cilantro, chopped
- Salt and pepper, to taste
- 3-4 tablespoons light coconut milk (for sautéing cauliflower rice)
Instructions
- Prepare the Marinade: In a large Ziplock bag, combine 1/2 cup light coconut milk, 1/2 cup sweet chili sauce, and the juice of half a lime. Season with salt and pepper, then mix thoroughly by squishing the bag.
- Marinate the Chicken: Add the chicken breasts to the marinade bag, seal it, and refrigerate for 30 minutes to 1 hour to allow flavors to infuse.
- Preheat and Prepare the Grill: Heat your grill to medium-high and grease the grates well to prevent sticking.
- Grill the Chicken: Place the marinated chicken breasts on the grill, cooking for 4-5 minutes on the first side, then flipping and cooking for another 3-4 minutes on the second side. Adjust cooking time based on breast size and preferred doneness.
- Rest the Chicken: Remove the grilled chicken from the grill and let it rest on a plate for 5 minutes to retain juices.
- Sauté the Cauliflower Rice: While the chicken rests, heat coconut oil in a large skillet over medium to medium-high heat. Add the cauliflower rice, season generously with salt and pepper, then sauté for 5-7 minutes until tender.
- Flavor the Cauliflower Rice: Squeeze the juice from the remaining half lime into the skillet. Stir in 3-4 tablespoons of light coconut milk to desired coconut flavor and add chopped fresh cilantro. Adjust seasonings with salt and pepper as needed.
- Plate and Serve: Spoon the flavored cauliflower rice onto plates, top with grilled chicken breasts, and serve alongside extra sweet chili sauce for dipping.
Notes
- For a higher carb option, serve this dish with regular cooked rice instead of cauliflower rice.
- Make sure to grease the grill grates well to prevent the chicken from sticking.
- Adjust coconut milk quantity in cauliflower rice sauté to your preferred level of coconut flavor.
- Resting the chicken post-grilling helps keep it juicy and tender.
