Ingredients
Dry Ingredients
- 2 cups all-purpose flour
- 1 ½ teaspoons baking powder (aluminium free)
- ¼ teaspoon salt
Wet Ingredients
- 2 ripe avocados
- 1 cup granulated sugar
- 3 eggs, room temperature
- 1 teaspoon vanilla extract
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper to prevent sticking and make for easy removal of the bread.
- Combine Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt until evenly mixed. Set this bowl aside for later.
- Cream Avocados and Sugar: In a large mixing bowl, use a hand mixer on medium-high speed to blend the ripe avocados and granulated sugar until the mixture is completely smooth and creamy.
- Add Eggs and Vanilla: Whisk in the eggs one at a time, followed by the vanilla extract, making sure everything is fully incorporated into the batter with no lumps.
- Fold in Dry Ingredients: Using a wooden spoon or rubber spatula, gently fold the dry ingredients into the wet avocado mixture. Stir carefully until the batter is just combined and no flour streaks remain.
- Bake the Bread: Pour the batter evenly into the prepared loaf pan. Place it in the preheated oven and bake for 55 to 60 minutes. Check doneness by inserting a toothpick into the center of the loaf; it should come out clean.
- Cool and Serve: Remove the bread from the oven and place the pan on a wire rack. Allow the bread to cool completely in the pan before slicing and serving to maintain its moist texture.
