Ingredients

  • 1 tablespoon minced garlic

  • ¼ cup feta cheese

  • 1 tablespoon olive oil from sun dried tomatoes
  • 1 teaspoon Italian seasoning
  • ⅛ teaspoon salt
  • ⅛ teaspoon pepper
  • 1 10-inch whole wheat flour tortilla


Instructions

  1. Whisk the egg whites: Place the egg whites into a bowl and whisk until well combined, then set aside.
  2. Heat the skillet: Preheat a large skillet over medium heat and add the olive oil taken from the sun dried tomatoes.
  3. Sauté spinach: Once the oil is fragrant, add the chopped spinach and sauté for 2-3 minutes until wilted.
  4. Add garlic and sun-dried tomatoes: Mix in the minced garlic, chopped sun-dried tomatoes, salt, and pepper with the spinach, then sauté for an additional minute to combine flavors.
  5. Form the egg mixture base: Shape the spinach mixture into a 10-inch diameter circle in the skillet.
  6. Pour egg whites: Carefully pour the whisked egg whites over the spinach circle and use a spatula to maintain the circular shape.
  7. Season: Sprinkle the Italian seasoning evenly over the eggs.
  8. Cook eggs: Allow the eggs to cook for 3-4 minutes, using a spatula to gently lift the edges to prevent sticking and prepare for flipping.
  9. Add feta cheese and tortilla: Sprinkle feta cheese over the eggs, then place the whole wheat tortilla on top of the eggs in the skillet.
  10. Flip the wrap: Using a plate or large spatula, carefully flip the tortilla and egg mixture so the tortilla is now on the bottom.
