Ingredients
Noodles
- 16 ounces brown rice noodles
Peanut Sauce
- 3 large cloves garlic (or 4-5 small)
- 1 tablespoon fresh grated ginger
- 1 tablespoon oil (olive or preferred cooking oil)
- ⅔ cup creamy peanut butter (low or no salt preferred)
- 4 tablespoons low sodium tamari or soy sauce
- ⅓-1 cup hot water
- 1 tablespoon rice vinegar
- 1 tablespoon toasted sesame oil
- 1-2 tablespoons sriracha
- 1-2 tablespoons maple syrup or honey
- ½ teaspoon red pepper flakes (optional for less spice)
- Optional: 2 teaspoons chili garlic sauce
To Serve (Optional)
- Crushed peanuts
- Scallions
- Additional red pepper flakes
Instructions
- Cook Noodles: Bring a large pot of water to a boil and cook the brown rice noodles according to the package instructions. Once cooked, drain and set aside.
- Sauté Aromatics: Finely mince the garlic cloves. In a sauté pan, heat 1 tablespoon of oil over low heat. Add the garlic and cook for about 2 minutes until golden brown. Add the fresh grated ginger and sauté for an additional minute, allowing the flavors to develop.
- Prepare Peanut Sauce: Remove the pan from heat and add the peanut butter, low sodium tamari or soy sauce, rice vinegar, toasted sesame oil, sriracha, maple syrup or honey, red pepper flakes, and optional chili garlic sauce. Begin by adding ⅓ cup of hot water and whisk vigorously to combine everything into a smooth sauce. Add more hot water gradually, up to 1 cup total, to achieve your preferred consistency.
- Adjust Seasoning: Taste the sauce and adjust seasoning by adding more soy sauce for saltiness, sriracha for heat, or any other seasonings according to preference.
- Toss Noodles with Sauce: Add about half of the prepared peanut sauce to the cooked noodles and toss well to combine. You can add more sauce gradually depending on how saucy you like your noodles. Extra sauce can be saved for other meals or to add to the dish later.
- Serve: Plate the noodles and garnish with crushed peanuts, chopped scallions, and a sprinkle of red pepper flakes. Serve immediately with your choice of veggies or proteins like grilled chicken or tofu.
Notes
- Use unsalted peanut butter and low sodium soy sauce to prevent the dish from becoming too salty.
- Peanut noodles can be served hot or cold. For a cold noodle salad, add fresh chopped vegetables. For a warm meal, serve alongside steamed broccoli and grilled protein.
- Store leftovers in the fridge for up to 5 days. To reheat and restore sauce consistency, warm noodles in a pan with a splash of water, broth, or soy sauce.
