Instructions
- Preheat the oven: Set your oven to 350°F (180°C) and prepare a baking sheet lined with parchment paper to ensure the cookies don’t stick.
- Mix wet ingredients: Using a hand or stand mixer, blend softened butter, granulated sugar, and molasses together until the mixture is smooth and fully incorporated.
- Add eggs and salt: Incorporate the salt, whole egg, and egg yolk into the butter mixture, beating until creamy and well combined, approximately one minute.
- Incorporate sourdough discard: Slowly add the sourdough discard, stirring gently to blend it thoroughly with the wet mixture.
- Add dry ingredients: Sift baking soda, ground ginger, cinnamon, nutmeg, cloves, and all-purpose flour into the wet mixture. Stir carefully until a tacky but cohesive dough forms.
- Form cookie balls: Scoop approximately 2-inch portions (about 55g each) and roll them into balls. Flour your hands if the dough is sticky to help handling.
- Coat in sugar: Roll each dough ball generously in granulated sugar to create a sweet crust and place them on the baking sheet spaced 3 inches apart to allow spreading.
