Description

These Simple Chickpea Cauliflower Burgers are a delicious and nutritious vegan option made from hearty chickpeas, fluffy riced cauliflower, vibrant sun-dried tomatoes, and fresh parsley. Baked to crispy perfection, these sturdy veggie burgers offer a flavorful and satisfying alternative that can easily become your new favorite burger.

Ingredients

Veggie Burger Mixture

  • ½ cup riced cauliflower (store-bought or homemade)
  • 1 (15 oz) can chickpeas, drained and rinsed
  • ½ cup almond flour
  • 2 cloves garlic, minced
  • 2 tablespoons sun-dried tomato paste (or ¼ cup sun-dried tomatoes)
  • 2 tablespoons fresh chopped parsley
  • ¾ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ¼ cup Italian seasoned breadcrumbs (gluten-free if preferred)
  • 1 tablespoon olive oil (plus 2 tablespoons for brushing)

Instructions

  1. Combine Ingredients: Place all ingredients except 1 tablespoon of olive oil and the breadcrumbs into a food processor bowl. Pulse to combine thoroughly, scraping down the sides between pulses. Add water, 1 teaspoon at a time, if the mixture is too dry. Add breadcrumbs and pulse until fully incorporated. Transfer the mixture to a medium mixing bowl.
  2. Chill Mixture: Cover the bowl and refrigerate for at least 30 minutes to allow the mixture to firm up, which helps the patties hold their shape during baking.
  3. Preheat Oven and Prepare Baking Sheet: Remove mixture from refrigerator. Preheat oven to 400°F (200°C). Spray a baking sheet with cooking spray to prevent sticking.
  4. Form Patties: Using a ⅓ cup measuring cup, scoop the mixture and form 3-4 evenly sized patties about ½ inch thick. Place patties spaced evenly on the prepared baking sheet. Brush both sides of each patty with olive oil to promote crispiness during baking.
  5. Bake: Bake in the preheated oven for 35-40 minutes, flipping the patties halfway through the cooking time to ensure even browning on both sides.
  6. Cool and Serve: Remove baked patties and let cool for at least 5 minutes before serving. Serve warm on toasted burger buns with your favorite sauces and toppings.

Notes

  • Use canned chickpeas to retain moisture; dry beans will result in a dry burger.
  • Chilling the mixture before forming patties is crucial for sturdiness during baking.
  • Brushing patties with olive or avocado oil helps achieve a crispy exterior.
  • The burger mixture can be made ahead and refrigerated, covered, for up to 24 hours before forming and baking.
  • Form burgers about ½ inch thick for even cooking and optimal texture.
  • Store leftover burgers in an airtight container in the refrigerator for up to 4 days; reheat in microwave or oven.
