Description

Salt River Bars are an irresistible layered treat combining sweet, salty, chewy, creamy, crunchy, and chocolatey flavors. Featuring layers of buttery caramel-infused crackers topped with a smooth blend of milk chocolate, butterscotch, and peanut butter, finished with a sprinkle of Maldon sea salt, these bars are a perfect crowd-pleaser.


Ingredients

Cracker Layers

  • 90 Club crackers

Caramel Mixture

  • 1 cup salted butter
  • 2 cups packed light brown sugar
  • 1 cup graham cracker crumbs
  • 3/4 cup heavy cream

Chocolate Topping

  • 1 1/2 cups milk chocolate chips
  • 1/2 cup butterscotch chips
  • 1/2 cup creamy peanut butter
  • Maldon sea salt for finishing, about 1 teaspoon


Instructions

  1. Prepare the pan: Line a 9×13 inch pan, preferably with straight sides, with parchment paper leaving extra hanging edges on the two long sides for easy removal later. Spray the parchment and pan sides lightly with nonstick spray.
  2. First cracker layer: Cover the bottom of the pan with a layer of Club crackers, cutting as necessary to fit. Arrange in five rows by six crackers each to cover the pan evenly.
  3. Make caramel mixture: In a medium heavy-bottomed pan over medium heat, melt together the salted butter, light brown sugar, graham cracker crumbs, and heavy cream. Stir constantly as the mixture melts.
  4. Boil caramel: Bring the mixture to a boil and continue stirring while boiling for 7 minutes to properly thicken the caramel.
  5. Layer caramel and crackers: Pour half of the caramel mixture over the first cracker layer, spreading it evenly to the edges. Quickly add a second layer of crackers on top of the caramel.
  6. Repeat layering: Pour the remaining caramel over the second layer of crackers and then add a final third layer of crackers on top.
  7. Chill layers: Refrigerate the pan to let the caramel layers set and chill while you prepare the topping.
  8. Make chocolate topping: In a microwave-safe bowl, combine milk chocolate chips, butterscotch chips, and creamy peanut butter. Microwave initially for 30–45 seconds and stir. Continue microwaving in 15-second intervals, stirring after each until the mixture is completely smooth.
  9. Spread chocolate topping and finish: Pour the melted chocolate mixture evenly over the top cracker layer. Sprinkle Maldon sea salt generously over the chocolate layer.
  10. Final chilling and cutting: Chill the pan for 1–2 hours until fully set. Use the parchment edges to lift the bars out of the pan for easier cutting. Cut with a sharp knife into bars and serve.

  • Using parchment paper with overhanging edges makes removal and cutting much easier.
  • Make sure to stir the caramel mixture constantly to prevent burning or sticking.
