Salmon

Pasta and Sauce

  • 8 ounces dried pasta (such as penne, fusilli, or spaghetti)

Instructions

  1. Prepare the Salmon: Line a rimmed baking sheet with parchment paper or aluminum foil. Place the salmon filets on the sheet, skin-side down if the skin is on. Lightly brush the tops with olive oil and lemon juice, then sprinkle evenly with kosher salt and black pepper.
  2. Roast the Salmon: Place the baking sheet in a cold oven, then close the door. Set the oven temperature to 400 degrees Fahrenheit and roast the salmon for 20 minutes. Check doneness by gently pressing the salmon; it should flake easily and register around 145°F internally. Optionally, for a crispier top, broil the salmon on the top oven rack for 1-2 minutes, watching closely to avoid burning.
  3. Cook the Pasta: While the salmon roasts, bring a large pot of well-salted water to a boil. Cook the pasta according to package directions until al dente. Reserve a small amount of pasta cooking water before draining the pasta.
  4. Toss Pasta with Sauce: Return the drained pasta to the pot. Stir in the pesto, grated Parmesan, and a pinch of black pepper until evenly combined. Add reserved pasta water a splash at a time if you prefer a slightly looser sauce. Taste and adjust seasoning if needed.
