Description
These Roasted Goat Cheese Stuffed Mini Peppers are a delightful appetizer or snack featuring sweet mini bell peppers filled with creamy goat cheese, then roasted to perfection and finished with a drizzle of balsamic glaze, honey, fresh thyme, and black pepper. They offer a wonderful balance of sweet, tangy, and savory flavors with a soft, charred texture.
Ingredients
Peppers
- 1 pound mini sweet bell peppers (about 12 peppers)
Filling and Toppings
- 10 ounces goat cheese
- Balsamic glaze, to drizzle
- Honey, to drizzle
- 2 tablespoons fresh thyme (or dried thyme as a substitute)
- Black pepper, to taste
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it is hot enough to roast the peppers evenly and develop a slight char.
- Prepare Peppers: Wash and thoroughly dry the mini sweet bell peppers. Slice each pepper in half lengthwise and carefully remove all seeds and the white membranes inside to create hollow halves ready for stuffing.
- Stuff Peppers: Using a spoon or small scoop, fill each pepper half with goat cheese. You can choose to fill them lightly or pack them generously according to your preference.
- Arrange for Roasting: Place the stuffed peppers in a single layer on a baking dish or baking sheet, ensuring they have enough space for even roasting.
- Roast Peppers: Place the dish in the preheated oven and roast the peppers for 20-25 minutes, or until the peppers are soft and slightly browned or charred on the edges.
- Finish and Serve: Remove the roasted peppers from the oven and transfer them to a serving platter. Drizzle the peppers with balsamic glaze and honey. Sprinkle fresh thyme leaves and freshly ground black pepper over the top. Serve warm and enjoy!
