Ingredients

Cauliflower

  • 1 large head cauliflower, approx 5 cups florets

Hummus Base

  • 3 tablespoons olive oil, divided
  • ¼ cup tahini
  • 2 tablespoons water, or more for desired consistency
  • 1 lemon, juiced
  • 1 garlic clove
  • ¼ teaspoon salt
  • ¼ teaspoon ground cumin
  • pinch ground coriander
  • pepper, to taste

Garnish

  • Olive oil
  • Sunflower seeds
  • Chopped parsley


Instructions

  1. Preheat the oven: Preheat your oven to 400 degrees Fahrenheit to prepare for roasting the cauliflower.
  2. Prepare and roast the cauliflower: Remove the florets from the head of cauliflower and place them on a baking tray. Drizzle with 1 tablespoon of olive oil and toss to coat evenly. Roast in the preheated oven for 20 minutes until tender and slightly golden.
  3. Blend the hummus: Transfer the roasted cauliflower florets to a high-speed blender or food processor. Add the tahini, remaining 2 tablespoons of olive oil, water, lemon juice, garlic clove, salt, ground cumin, and ground coriander. Season with pepper to taste. Blend on high speed until the mixture becomes smooth and creamy. Adjust water quantity, if needed, to reach desired consistency.
  4. Serve and garnish: Transfer the hummus to a serving bowl. Drizzle with olive oil and sprinkle sunflower seeds and chopped parsley on top as garnish.
