Carrots
- 1½ lbs carrots (about 8 large carrots)
Seasoning & Topping
- 2 tbsp extra-virgin olive oil
- 2 tbsp pure honey
- 1 tsp water
- 1 clove garlic (minced)
- 2 tbsp fresh dill
- ½ cup feta cheese
- Salt & pepper to taste
Instructions
- Preheat Oven: Preheat your oven to 425 degrees F to ensure it’s hot enough for roasting the carrots perfectly.
- Wash and Peel Carrots: Thoroughly wash the carrots under running water and peel them to remove the outer skin.
- Cut Carrots: If the carrots are large, cut each one in half lengthwise for even cooking and better texture.
- Prepare Baking Sheet: Line a baking sheet with parchment paper and evenly spread out the carrots on the sheet.
- Make the Glaze: In a small bowl, whisk together the extra-virgin olive oil, pure honey, water, minced garlic, salt, and pepper until well combined.
- Coat Carrots: Pour the glaze evenly over the carrots ensuring they are all nicely coated.
- Roast: Bake the carrots in the preheated oven for 20-25 minutes, stirring halfway through to ensure even roasting.
- Add Toppings: Once roasted, remove the carrots from the oven and immediately sprinkle with crumbled feta cheese and fresh dill.
- Serve: Serve the roasted carrots hot as a flavorful and nutritious side dish.
