Carrots

  • lbs carrots (about 8 large carrots)

Seasoning & Topping

  • 2 tbsp extra-virgin olive oil
  • 2 tbsp pure honey
  • 1 tsp water
  • 1 clove garlic (minced)
  • 2 tbsp fresh dill
  • ½ cup feta cheese
  • Salt & pepper to taste


Instructions

  1. Preheat Oven: Preheat your oven to 425 degrees F to ensure it’s hot enough for roasting the carrots perfectly.
  2. Wash and Peel Carrots: Thoroughly wash the carrots under running water and peel them to remove the outer skin.
  3. Cut Carrots: If the carrots are large, cut each one in half lengthwise for even cooking and better texture.
  4. Prepare Baking Sheet: Line a baking sheet with parchment paper and evenly spread out the carrots on the sheet.
  5. Make the Glaze: In a small bowl, whisk together the extra-virgin olive oil, pure honey, water, minced garlic, salt, and pepper until well combined.
