Ingredients

Base

  • 1 Tablespoon orange zest (optional)
  • Drop of orange food coloring (optional)

Instructions

  1. Prepare Sherbet Base: In a medium saucepan, heat the heavy cream, whole milk, and 1 3/4 cups of granulated sugar over medium heat, stirring frequently. Continue until all the sugar has dissolved and the mixture is smooth, about 5-7 minutes. Remove from heat and stir in vanilla extract. Allow the mixture to cool completely, then chill it thoroughly in the refrigerator or an ice bath in a sealed container.
  2. Make Raspberry Puree: While the sherbet base chills, place 8 ounces of raspberries and the remaining 2 tablespoons of sugar in a blender and pulse until smooth. Strain the puree through a fine mesh sieve to remove seeds, creating a smooth raspberry mixture.
  3. Churn Plain Sherbet Base: Once fully chilled, pour the sherbet base into an ice cream maker and churn it according to the manufacturer’s instructions until it reaches a soft-serve consistency.
  4. Prepare Orange Sherbet Layer: Transfer about two-thirds of the churned sherbet base to a bowl and place it in the freezer for later. To the remaining one-third in the ice cream maker, add orange juice, orange zest (if using), and a drop of orange food coloring. Churn again until the mixture reaches soft-serve consistency, about 2 minutes, then transfer to a bowl and refrigerate.
  5. Prepare Lime Sherbet Layer: Return one-third of the plain sherbet base to the ice cream maker (it’s okay if it has some orange flavor lingering). Add lime juice, lime zest (if using), and a drop of green food coloring. Churn until soft-serve consistency is achieved, another 2-3 minutes. Transfer to a bowl and chill.
  6. Prepare Raspberry Sherbet Layer: Return the final third of the plain sherbet base to the ice cream maker bowl, add the raspberry puree, and churn until the mixture reaches soft-serve consistency.
  7. Assemble Rainbow Sherbet: In a bread pan or other freezer-safe container, spoon alternating layers of orange, lime, and raspberry sherbet, gently swirling slightly with a spoon to create a colorful marbled effect. Cover and place in the freezer for 4-6 hours until firm.
