- 1 1/4 cup whole milk

- 1/2 tsp cardamom
- 1/2 cup pistachios, blended
- 1-2 drops green food color, more if needed
Whipped Cream Topping
- 2 cups heavy whipping cream
- 1 tsp vanilla extract
- 3 tbsp powdered sugar
Garnish
- Remaining pistachios (blended)
- 3 tbsp dried rose petals
Instructions
- Roast and Blend Pistachios: Dry roast 1 cup raw unsalted pistachios in a medium pan over medium heat for 3-4 minutes until aromatic. Remove promptly to avoid burning. Once cooled slightly, blend in a mini food processor until finely chopped but not past nut butter stage.
- Make The Pistachio Cake Using a Boxed Mix: In a large mixing bowl, combine 1/2 cup melted unsalted butter, 1 cup whole milk, 2 eggs, and 1/2 tsp cardamom powder. Mix well. Add all dry ingredients from the vanilla boxed cake mix and mix until just incorporated. Add 1-2 drops green food color and 1/2 cup blended pistachios; fold gently into batter. Prepare a 9×13″ baking dish by buttering and flour-dusting it. Pour batter into dish and bake at temperature per cake mix instructions (typically 350°F) for about 30 minutes until a toothpick comes out clean. Allow cake to cool for 30 minutes.

- Soak the Cake: Once cooled, poke holes all over the cake about 1 inch apart using a fork. Pour the remaining milk mixture evenly over the cake to allow absorption.
