Ingredients

For the Crust:

  • 6-8 Tablespoons ice water

  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 cup whole milk

Instructions

  1. Prepare the crust: In a bowl or food processor, combine flour, salt, and 2 tablespoons of sugar. Add the cold, cubed butter and cut it into the flour mixture using a fork until the butter becomes pea-sized chunks. If using a food processor, pulse for about 30 seconds. Stir in the finely chopped pistachios. Gradually add ice water 1-2 tablespoons at a time, mixing just enough to form a dough ball without overworking it. Shape into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Preheat and prepare for filling: Preheat the oven to 350°F (175°C). In a blender or food processor, combine the roasted pistachios with half a cup of white sugar to prevent caking, and blend until the pistachios are finely ground.
  3. Mix the filling: In a bowl, beat the remaining half cup of sugar with the softened cream cheese until smooth and creamy. Add eggs one at a time, mixing thoroughly after each addition. Stir in vanilla and almond extracts, then whisk in the whole milk. Fold in the ground pistachio mixture until the filling is smooth and well combined.
  4. Assemble the pie: Roll out the chilled pie dough to fit a 9-inch pie dish, then transfer it and crimp the edges. Pour the prepared filling into the crust.
  5. Bake the pie: Bake for 45-50 minutes until the outer three inches of the pie filling is set but the center remains slightly jiggly, which is normal. The pie will continue to firm as it cools.
  6. Cool and serve: Allow the pie to cool completely at room temperature for 1-2 hours, then refrigerate for an additional 2-3 hours. Serve cold topped with whipped cream and a sprinkle of chopped pistachios.
