Instructions
- Prepare Ingredients: Crumble the 8 oz block of feta cheese into a food processor or blender. Mince one clove of fresh garlic and add it to the feta.
- Blend Feta and Garlic: Pulse the food processor or blender a few times to finely chop the feta and garlic.
- Add Yogurt and Olive Oil: Add ¼ cup of plain Greek yogurt and 1 tablespoon of quality olive oil to the mixture. Blend until the dip is smooth and creamy. If desired, add up to 1 additional tablespoon of olive oil or yogurt to thin the dip to your preferred consistency.
- Mix in Pesto: Add 2 tablespoons of pesto and blend just enough to incorporate it evenly throughout the dip. Taste and adjust by adding more pesto if desired.
- Fork Method Alternative: If not using a food processor, peel, smash, and mince one clove of garlic. Finely crumble the feta into a bowl and add the garlic, yogurt, olive oil, and pesto. Use a fork to mash and combine ingredients into a rustic, creamy spread, adjusting thickness with additional olive oil or yogurt as needed.
- Serve: Transfer the whipped feta to a serving bowl. Garnish with a drizzle of olive oil and some extra pesto if desired. Serve immediately with your favorite fresh vegetable dippers, pita bread, or crackers.
- Storage: Store any leftover dip in an airtight container in the refrigerator for up to 3 days.
