Description
Payday Pie is a decadent dessert inspired by the classic Payday candy bar, featuring a rich peanut butter and marshmallow filling nestled in a golden-baked pie crust, topped with crunchy roasted peanuts and a luscious homemade caramel drizzle. This pie combines creamy, sweet, and salty flavors with a delightful texture contrast, making it a perfect treat for peanut butter lovers.
Ingredients
Pie Crust
- 1 unbaked pie crust (9-inch)
Filling
- 10 ounces peanut butter chips
- 1 (14-ounce) can sweetened condensed milk
- 3 Tablespoons salted butter
- 2 cups miniature marshmallows
Caramel Topping
- 1 1/2 cups dry roasted unsalted peanuts
- 1/2 cup (100g) granulated sugar
- 3 Tablespoons salted butter, cubed
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
- 1/2 teaspoon kosher salt
Instructions
- Prepare the Pie Crust: Preheat your oven to 400°F. On a floured surface, roll out the unbaked pie crust and transfer it to a 9-inch pie plate. Crimp the edges to shape the crust and prick the bottom and sides with a fork to prevent bubbling.
- Bake the Pie Crust: Line the crust with parchment paper and fill it with pie weights to keep it from shrinking. Bake for 15 minutes, then remove the weights and parchment paper, and continue baking for another 15 minutes or until the crust is golden brown. Set aside to cool.
- Make the Filling: In a saucepan over medium heat, combine the peanut butter chips, sweetened condensed milk, and salted butter. Cook and stir until all ingredients have melted and the mixture is smooth.
- Add Marshmallows: Stir in the miniature marshmallows and continue stirring until they have melted and fully incorporated into the filling.
- Fill the Pie: Pour the warm peanut butter and marshmallow filling into the baked pie crust and spread evenly. Sprinkle the dry roasted unsalted peanuts evenly over the top of the filling.
- Prepare the Caramel Topping: In a small saucepan over medium heat, cook the granulated sugar, stirring constantly, until it melts and turns a rich amber color. Add the cubed salted butter and stir until fully melted.
- Finish the Caramel: Stir in the heavy cream and combine thoroughly. Bring the mixture to a boil and let it boil for 1 minute. Remove from heat and stir in the vanilla extract and kosher salt. Allow the caramel to cool for 5 minutes to thicken slightly.
- Top the Pie: Drizzle the caramel evenly over the peanuts on top of the pie to create a beautiful, glossy finish.
- Chill and Set: Refrigerate the pie for at least 4 hours until the filling and caramel are fully set and firm before slicing and serving.
Notes
- For a quicker set, chill the pie overnight.
- Ensure to stir the caramel constantly to avoid burning the sugar.
- Use salted butter to balance the sweetness, but adjust salt if using unsalted butter.
- Store any leftovers covered in the refrigerator and consume within 3 days for best quality.
