Description

These Patriotic Mini Cheesecakes are a festive and delightful dessert perfect for celebrations. Made with a creamy vanilla cheesecake batter swirled with red, white, and blue sprinkles and nestled atop a crunchy Golden Oreo crust, these individual cheesecakes are baked to perfection and chilled before serving. Topped with whipped cream and colorful sprinkles, they add a fun and colorful touch to any holiday party or summer gathering.

Ingredients

Cheesecake Batter

  • 32 oz cream cheese (4 blocks, 8 oz each), softened
  • 1 cup granulated white sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • ⅓ cup red, white, and blue sprinkles (for the batter)

Crust and Topping

  • 36 Golden Oreos
  • ⅓ cup red, white, and blue sprinkles (for topping)

Garnish

  • Whipped cream
  • Additional red, white, and blue sprinkles

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) to prepare for baking the mini cheesecakes.
  2. Mix Cream Cheese and Sugar: Using a hand mixer, beat the softened cream cheese, vanilla extract, and granulated sugar together until the mixture is smooth and creamy, ensuring there are no lumps.
  3. Add Eggs: On low mixer speed, add the eggs one at a time, mixing after each addition just until combined to avoid overmixing.
  4. Fold in Sprinkles: Gently fold in ⅓ cup of red, white, and blue sprinkles to incorporate color and festive fun into the batter without breaking the sprinkles.
  5. Prepare Muffin Tin: Line each of the 12 cups in a regular muffin tin with cupcake liners and place one whole Golden Oreo at the bottom of each liner as the crust base.
  6. Fill Cups with Batter: Pour the cheesecake batter into each liner, filling about 3/4 full to allow room for rising and even baking.
  7. Add Topping Sprinkles: Sprinkle additional red, white, and blue sprinkles on top of each filled cheesecake. You may not need to use all of them.
  8. Bake: Bake in the preheated oven for 15 to 20 minutes, until the centers of the cheesecakes are almost set but slightly jiggly.
  9. Cool and Chill: Let the cheesecakes cool completely at room temperature. Then refrigerate them for at least 2 hours to set fully and develop flavors.
  10. Serve: Before serving, top each mini cheesecake with whipped cream and sprinkle with extra red, white, and blue sprinkles for a festive finishing touch.

Notes

  • Use a regular 12-cup muffin tin, not a mini muffin pan, for correct sizing.
  • Store leftover mini cheesecakes in an airtight container in the refrigerator for up to 4 days.
  • Be careful not to overmix the batter once eggs are added to keep the cheesecake texture light.
  • Allow cheesecakes to cool completely before refrigeration to prevent condensation.
  • This recipe works best with Golden Oreos for the base to maintain the light color theme.
