Description
This Oreo Mousse recipe combines a creamy homemade vanilla pudding base with whipped coconut topping and crushed gluten-free Oreos for a light, fluffy, and indulgent dessert. Perfectly balanced with the rich flavors of vanilla and chocolate cookies, the mousse is simple to prepare and can be made ahead for easy entertaining.
Ingredients
Whipped Topping
- 9 oz tub whipped topping, SoDelicious Cocowhip recommended
Oreos
- 26 gluten free Oreos, roughly chopped or crushed
Vanilla Pudding (makes 1-1/2 cups)
- 1/3 cup sugar
- 2 Tablespoons cornstarch
- 1/4 teaspoon salt
- 1-1/4 cups milk (unsweetened almond milk recommended)
- 3 large egg yolks
- 3 Tablespoons butter or vegan butter
- 1 Tablespoon vanilla extract
Instructions
- Make the Vanilla Pudding: Place a fine mesh sieve over a bowl and set aside. In a saucepan, whisk together sugar, cornstarch, and salt. Gradually add 1/4 cup of milk, whisking until smooth. Add the egg yolks and whisk again until fully incorporated. Pour in the remaining 1 cup of milk and whisk to combine.
- Cook the Pudding: Heat the mixture over medium heat, stirring slowly and constantly with a whisk, until it thickens and just begins to bubble, about 6 minutes. Immediately reduce heat to low, switch to a spatula, and continue to stir and cook until the pudding becomes very thick, about 2 more minutes.
- Finish the Pudding: Remove the pan from heat and stir in the butter and vanilla until melted and fully combined. Pour the pudding through the fine mesh sieve to remove any cooked egg bits. Cover the surface with plastic wrap directly on top to prevent a skin from forming, then refrigerate until completely chilled. The pudding can be made several days ahead.
- Prepare the Mousse: Once the pudding is chilled, fold in the whipped topping gently to combine. Then fold in the chopped Oreos carefully to preserve some texture.
- Chill and Serve: Refrigerate the combined mousse mixture for at least 4 hours to set before serving.
Notes
- This Oreo Mousse will last 3-4 days refrigerated, though the cookies will soften over time.
- Using a whipped coconut topping keeps the dessert dairy-free and vegan-friendly.
- For best texture, fold the Oreos into the mousse just before serving or chilling.
