- 1 cup almond flour*
- 1/2 cup peanut butter**
- 1/4 cup cocoa powder
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/4 tsp salt
Peanut Butter Filling
- 1/3 cup peanut butter
- 1/2 tbsp maple syrup
- 1/2 tbsp coconut oil, melted
Chocolate Drizzle
- 1/4 cup chocolate chips
- 1 tsp coconut oil
- Flaky sea salt (optional)
Instructions
- Prepare brownie dough: In a bowl, combine almond flour, peanut butter, cocoa powder, maple syrup, vanilla extract, and salt. Mix thoroughly until the mixture is evenly combined and forms a dough. Set this mixture aside.
- Prepare peanut butter filling: In a separate bowl, mix together peanut butter, maple syrup, and melted coconut oil until the filling is smooth, creamy, and well blended.
- Assemble: Divide the brownie dough evenly among 6 slots in a silicone muffin pan or a muffin tin lined with muffin liners. Press the dough firmly across the bottom of each slot. Then press a tablespoon-sized well in the center of each to hold the filling. Spoon the peanut butter filling into the wells evenly.
- Chill: Place the assembled brownie cups in the freezer and chill for 5 to 10 minutes, or until the peanut butter filling is set and firm.
- Add chocolate drizzle: Melt the chocolate chips and coconut oil in the microwave in 30-second intervals, stirring after each, until fully melted without burning. Remove the brownie cups from the freezer and pan, then drizzle the melted chocolate over each cup. Sprinkle with flaky sea salt if desired. The chocolate drizzle will set quickly against the cold brownies; if needed, return to the freezer for 1 minute to solidify the drizzle.
- Store: Enjoy immediately or store the brownie cups in a sealed container in the refrigerator. They will keep fresh for up to one week.
