Description

This spicy chicken salad combines tender cooked chicken breast with fresh herbs, crunchy bell pepper, and a creamy, tangy dressing with a fiery kick from sriracha. Perfectly balanced with yogurt and mayo, this protein-packed salad is versatile and easy to prepare, ideal for sandwiches, wraps, or as a flavorful dip with pita chips and crackers.

Ingredients

Chicken and Veggies

  • 1 ½ cups finely chopped cooked chicken breast (about ¾ pounds)
  • ¼ cup chopped fresh cilantro
  • ¼ cup chopped fresh parsley (or more cilantro)
  • ¼ cup finely chopped scallions (about 2 scallions), plus extra for topping
  • 1 small red bell pepper, chopped

Dressing

  • 3 tablespoons plain nonfat Greek yogurt
  • 2 to 3 tablespoons mayonnaise
  • 2 tablespoons sriracha
  • 1 teaspoon honey
  • Juice from ½ lime
  • Salt and pepper, to taste

Instructions

  1. Prepare Ingredients: Finely chop the cooked chicken breast, fresh cilantro, fresh parsley, and scallions. Chop the red bell pepper into small pieces to add crunch and color.
  2. Mix the Salad: In a medium bowl, combine the chopped chicken, cilantro, parsley, scallions, and bell pepper. Add the plain nonfat Greek yogurt, mayonnaise, sriracha, honey, lime juice, and season with salt and pepper. Stir well until all ingredients are thoroughly mixed and the dressing coats the chicken evenly.
  3. Serve: Use the spicy chicken salad as a filling for sandwiches or wraps, or serve it as a dip with pita chips or crackers. Garnish with extra chopped scallions if desired for added flavor and presentation.

Notes

  • To make this recipe dairy-free, substitute the plain nonfat Greek yogurt with dairy-free plain Greek yogurt or use a combination of dairy-free mayo and dairy-free yogurt.
  • Adjust the amount of sriracha to control the heat level according to your preference.
  • Make sure the chicken is finely chopped to allow the flavors to meld well and for easy scooping.
  • This salad keeps well refrigerated for up to 3 days in an airtight container.
