Description

These Monster Cookie Protein Bars are a delicious and nutritious snack combining creamy peanut butter, quick oats, and vanilla protein powder with sweet mini chocolate chips and colorful mini M&M’s. Perfect for a post-workout boost or a tasty treat on-the-go, these no-bake bars come together quickly and require just refrigeration to set.

Ingredients

Main Ingredients

  • 1 cup no stir creamy peanut butter
  • 1/3 cup honey
  • 2/3 cup quick oats
  • ½ cup vanilla protein powder
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Toppings

  • ¼ cup mini chocolate chips
  • 2 tablespoons mini M&M’s

Instructions

  1. Combine Ingredients: Add the peanut butter, honey, quick oats, vanilla protein powder, vanilla extract, salt, and mini chocolate chips into a mixing bowl.
  2. Mix Batter: Use a rubber spatula to thoroughly mix all the ingredients until they come together into a thick, cohesive batter.
  3. Prepare Pan: Line an 8×8 inch baking dish with parchment paper to prevent sticking and make it easier to remove the bars later.
  4. Spread Batter: Evenly spread the thick batter into the lined pan, pressing it down gently to create an even layer.
  5. Add Toppings: Press the mini M&M’s into the top of the batter to decorate and add a colorful crunch.
  6. Refrigerate: Place the pan in the refrigerator and chill for 1 to 2 hours until the bars have firmed up and hold their shape.
  7. Cut Bars: Remove the bars from the pan by lifting the parchment paper, place on a cutting board, and slice into 12 rectangular bars for serving.

Notes

  • Store leftover bars in an airtight container in the refrigerator for up to 5-7 days or freeze for 2-3 months.
  • You can substitute almond butter or sunflower seed butter for peanut butter to change up the flavor.
  • Use your favorite protein powder flavor, but vanilla works best to complement the sweet mix-ins.
