Ingredients
Sweet Potatoes
- 2-3 sweet potatoes, halved or cubed

- 1 tablespoon sweet white miso paste

Instructions
- Preheat the Oven: Set your oven to 425°F (220°C) to prepare for roasting the sweet potatoes.
- Prepare the Miso Butter: In a small bowl, mix the softened unsalted butter, sweet white miso paste, ground ginger, and cracked black pepper until fully blended. Set this flavorful miso butter aside.
- Prepare the Sweet Potatoes: Wash and slice the sweet potatoes in half or cube them as desired. Drizzle evenly with olive oil to coat.
- Roast the Potatoes (First Side): Place the potatoes cut side down on a baking tray. Roast in the preheated oven for 28-30 minutes or until the cut side turns a golden brown color.
- Flip and Continue Roasting: Turn the potatoes over and roast for an additional 15-20 minutes, or until they are tender when pierced with a fork. Remove from the oven once cooked through.
