Ingredients
Vegetable and Lentil Mixture
- 1 tablespoon oil
- 2 cups cooked brown or black lentils
- 1 red onion, diced
- 1 red pepper, diced
- 1 yellow pepper, diced
- 2 garlic cloves, minced
- 50 g sweet corn
- 3 tablespoons sliced jalapenos, diced
- 1 teaspoon paprika
- 0.5 teaspoon garlic powder
- 0.5 teaspoon cumin powder
- 0.5 teaspoon oregano
- Salt to taste
Enchilada Assembly
- 2.5 cups enchilada sauce
- 6-8 regular flour tortilla wraps
- 100 g mozzarella and cheddar cheese mix, shredded
- 100 g sour cream
Instructions
- Sauté Vegetables: Heat the oil in a pan over medium heat. Add the diced onion along with the red and yellow peppers. Sauté for 6-7 minutes, stirring frequently, until the vegetables soften. Add the minced garlic and cook for another minute to release its aroma.
- Add Lentils and Seasonings: Stir in the paprika, garlic powder, cumin powder, oregano, and salt. Then add the cooked lentils, diced jalapenos, and sweet corn. Cook for 3-4 minutes, stirring until everything is warmed through and well combined.
- Incorporate Sauce and Sour Cream: Pour 1 cup of enchilada sauce and 50 g of sour cream into the pan with the lentil mixture. Mix thoroughly to combine. Taste and adjust seasoning as needed for flavor balance.
- Preheat Oven and Prepare Baking Dish: Preheat your oven to 180°C (356°F). Lightly grease or line a baking dish and spread 2 tablespoons of enchilada sauce evenly on the bottom to prevent sticking and add flavor.
- Assemble Enchiladas: Lay out each tortilla on a flat surface. Spoon an equal amount of the lentil mixture into the center of each wrap. Fold in the top and bottom edges before rolling the tortilla tightly. Place each rolled tortilla seam side down in the baking dish.
- Add Sauce and Cheese: Once all tortillas are arranged, pour the remaining enchilada sauce evenly over them. Sprinkle the shredded mozzarella and cheddar cheese mixture on top.
- Bake: Place the baking dish in the preheated oven. Bake for 20-25 minutes, or until the cheese is melted and golden brown on top.
- Serve: Remove from the oven and serve hot. Add dollops of the remaining sour cream on top and garnish with fresh chopped cilantro if desired for an added burst of freshness.
Notes
- Use either brown or black lentils based on your preference; both work well.
- Adjust jalapeno quantity according to your desired spice level.
- For a gluten-free version, substitute regular tortillas with gluten-free wraps.
- Leftover enchiladas can be refrigerated and reheated in the oven for best texture.
- Adding fresh cilantro garnish adds color and a fresh herbal note.
