Ingredients

Pizza Dough

  • 1 ball Easy pizza dough (or store-bought dough)

Lemon Brine

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon water
  • 1 tablespoon fresh parsley, chopped
  • 1 small garlic clove, grated
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • ¼ teaspoon fine salt
  • ¼ teaspoon black pepper

Mozzarella

  • 5 oz (150 grams) fresh mozzarella (or ⅓ to ½ cup shredded firm mozzarella)

To Finish

  • 1 tablespoon lemon juice
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon fresh parsley
  • Freshly ground black pepper, to taste


Instructions

  1. Prepare the pizza dough. Follow the easy no-knead pizza dough recipe through step 5, including shaping the dough and preheating your oven with the pizza stone or alternative baking surface.
  2. Prepare the cheese. If using fresh mozzarella in water, slice it into ½ inch thick pieces. Dab with paper towels if it is very watery to remove excess moisture. If using shredded mozzarella, have it ready for topping.
  3. Shape the dough. Once the dough is ready, place it on a sheet of parchment paper. Starting from the center, gently press the dough outward with your fingers until the pizza measures approximately 9×13 inches. Then transfer the dough on the parchment to a pizza peel or the backside of a rimmed baking sheet for easy transfer.
  4. Make the lemon brine. In a glass jar with a lid, combine the extra virgin olive oil, water, chopped parsley, grated garlic, lemon zest, lemon juice, fine salt, and black pepper. Shake vigorously until the mixture is well emulsified.
  5. Add the toppings. Create a few dimples in the stretched dough with your fingers and evenly scatter the lemon brine over the dough, making sure to fill the dimples. Arrange the mozzarella cheese over the top evenly.
  6. Bake the pizza. Using the pizza peel, carefully transfer the pizza with parchment paper onto the preheated pizza stone or the inverted baking sheet in the oven. Bake until the crust and cheese are beautifully browned and crisp, approximately 8-10 minutes in a fan-forced oven. Oven times may vary, so watch closely.
  7. Finish and serve. Once baked, top the pizza with fresh lemon juice, sprinkle grated parmesan cheese and fresh parsley, then season with freshly ground black pepper or chili flakes if desired. Slice and serve immediately for the best flavor and texture.

Notes

  • Alternative to a pizza stone: Use a rimmed baking sheet inverted on the lowest oven rack and preheat it thoroughly. Place the pizza on parchment on a pizza peel or the back of another baking sheet, then slide the pizza onto the hot inverted baking sheet to achieve a crisp crust.
  • Storing leftovers: Cover leftover pizza tightly and refrigerate for up to 1 day. For longer storage, freeze up to 3 months. Reheat frozen leftovers in the oven until crispy again.
