Description
A refreshing and healthy Lemon Parmesan Kale Salad featuring tender massaged kale leaves dressed in a zesty lemon and garlic olive oil dressing, topped with crispy homemade croutons and freshly grated Parmesan cheese. Perfect as a light side dish or a nutritious snack.
Ingredients
Kale Salad
- 4 cups curly kale
- 2 tablespoons fresh lemon juice
- 2 tablespoons extra virgin olive oil
- ¼ teaspoon fresh minced garlic
- ¼ teaspoon salt
- ⅛ teaspoon black pepper, or to taste
- ¼ cup freshly grated Parmesan cheese
Croutons
- ½ cup croutons (homemade or store bought)
Instructions
- Prepare the Kale: If starting with a bunch of curly kale, wash and dry the leaves thoroughly, then remove the leaves from the stems. Finely chop the kale leaves and place them into a medium-large bowl.
- Make the Dressing: In a small bowl, whisk together fresh lemon juice, extra virgin olive oil, minced garlic, salt, and black pepper until well combined.
- Massage the Kale: Drizzle about 1/2 teaspoon of the dressing onto the chopped kale. Massage the dressing gently into the kale leaves by rubbing and squeezing them with your hands until the leaves darken in color and become tender and silky in texture.
- Dress the Salad: Pour the remaining dressing over the massaged kale and toss well to coat all the leaves evenly.
- Add Parmesan Cheese: Finely grate the Parmesan cheese using a box grater, then roughly chop the grated cheese into smaller bits for even distribution. Sprinkle this grated cheese over the tossed kale salad for a cheesy flavor in every bite.
- Prepare Crispy Croutons: Place croutons in a plastic bag or between two paper towels. Use a bottle of olive oil to crush the croutons into small, panko-sized pieces. Sprinkle these crispy crouton bits over the kale salad just before serving to maintain crunchiness.
- Serve Immediately: Enjoy the salad right away while the crouton topping is still perfectly crispy.
Notes
- This recipe yields 4 one-cup servings, ideal as a side dish or side salad.
- For a more robust garlic flavor, you can increase the minced garlic quantity slightly.
- Use freshly grated Parmesan cheese for the best flavor and texture; pre-grated cheese can be substituted but may not melt or blend as well.
- Crushing the croutons with olive oil creates a delightful crispy topping that enhances every bite.
