  • 3 Eggs
  • 2 cups (60g) raw Spinach Leaves
  • ¼ teaspoon Salt
  • ⅛ teaspoon Black Pepper
  • ¼ teaspoon Xanthan Gum (optional)


Instructions

  1. Blend Ingredients: Add all the ingredients to a blender or food processor and blend until pureed and smooth, creating a uniform batter.
  2. Heat Pan: Preheat a 10-inch frying pan or crepe pan over medium-high heat and lightly oil it to prevent sticking.
  3. Cook First Side: Pour one-third of the batter into the pan using a ladle, spreading it evenly in a circular shape. Cover with a lid and cook for 2 minutes until bubbles form and the edges start to firm up.
  4. Flip the Wrap: Remove the lid, carefully loosen the edges and the center of the wrap using a flexible silicone spatula, then quickly flip the wrap over. Cover again and cook for another 2 minutes or until fully cooked.
  5. Repeat: Remove the cooked wrap and repeat the process two more times with the remaining batter to make a total of three spinach wraps.

Notes

  • Storage: After cooling completely, stack wraps with parchment or wax paper between layers to prevent sticking. Store in an airtight container or resealable bag in the refrigerator for up to 5 days.
  • Freezing: For longer storage, freeze wraps separated by parchment paper on a baking sheet. Once frozen, transfer to an airtight container or resealable bag and freeze up to 3 months.
  • Reheating: Reheat wraps in a skillet or griddle over medium heat for 1-2 minutes per side until warm and pliable. Alternatively, thaw overnight in the refrigerator before reheating.
