Description
This Keto Lemon Bread is a moist and flavorful low-carb treat, perfect for those following a ketogenic diet or anyone looking for a grain-free, sugar-free dessert. Made with almond flour, sweetened with granulated sweetener, and infused with fresh lemon juice and zest, it’s a refreshing bread that pairs well with tea or breakfast.
Ingredients
Dry Ingredients
- 2 cups almond flour (for nut free, try this Vegan Lemon Bread)
- 1/3 cup granulated sweetener (for sugar free, I like Lakanto)
- 1 tbsp baking powder
- 1/2 tsp salt
Wet Ingredients
- 2/3 cup plain yogurt or coconut cream
- 1/4 cup lemon juice
- 3 eggs or flax eggs
- 1 tbsp lemon zest
Instructions
- Prepare the Pan: Grease a 9×5 inch loaf pan or line it with parchment paper to prevent sticking.
- Preheat Oven: Set your oven to 325°F (163°C) and allow it to fully preheat for even baking.
- Mix Ingredients: In a large bowl, stir together the almond flour, granulated sweetener, baking powder, and salt. Add the plain yogurt or coconut cream, lemon juice, eggs or flax eggs, and lemon zest. Mix thoroughly until the batter is smooth and well combined.
- Pour Batter: Transfer the batter into the prepared loaf pan, spreading it evenly.
- Bake: Place the pan in the oven and bake for about 50 minutes, or until a toothpick inserted into the center comes out clean.
- Cool Bread: Once baked, remove the bread from the oven and allow it to cool completely. Run a knife around the edges before gently removing the loaf to keep it intact, as it is very moist and soft.
- Store: Loosely cover and store the bread at room temperature overnight, refrigerate leftovers up to 5 days, or slice and freeze portions for up to 2 months.
Notes
- Using lemon zest is crucial to impart the full lemon flavor to this bread.
- For a nut-free alternative, use the suggested Vegan Lemon Bread recipe.
- Flax eggs can be used as a vegan substitute for regular eggs.
- Allowing the bread to cool fully ensures easier removal from the pan without breaking.
- Store the bread covered to maintain moisture and freshness.
