This Instant Pot Rice Pudding recipe is a creamy, comforting dessert made effortlessly with the help of a pressure cooker. Featuring aromatic spices like cinnamon and nutmeg, and sweetened with condensed milk, this classic pudding is perfect for a quick, satisfying treat any time of the year.
Ingredients
Liquid Ingredients
- 2 cups whole milk
- 1¼ cups water
- 1 can (14 oz) sweetened condensed milk
- 1 teaspoon vanilla extract
Dry and Spice Ingredients
- 1 cup long-grained rice (Basmati or short grain white rice also works)
- 1 teaspoon cinnamon
- ½ teaspoon freshly grated nutmeg
- Pinch of salt
Instructions
- Rinse the rice: Rinse 1 cup of rice well using a fine mesh colander to remove excess starch. Let it drain thoroughly.
- Add liquids and spices to Instant Pot: Pour 2 cups whole milk and 1¼ cups water into the Instant Pot. Add a pinch of salt, 1 teaspoon cinnamon, and ½ teaspoon freshly grated nutmeg to the liquid.
- Add rice and mix: Add the rinsed and drained rice to the Instant Pot, then stir everything to combine and distribute the spices evenly.
- Pressure cook: Secure the lid on the Instant Pot, seal it by closing the vent, and set it to pressure cook for 10 minutes.
- Natural pressure release: When cooking finishes, allow the Instant Pot to naturally release pressure for 10 minutes before proceeding.
- Release remaining pressure: After the natural release period, press Cancel to turn off the Instant Pot and carefully open the vent to release any remaining pressure.
- Combine sweetened condensed milk and vanilla: Open the lid, add half the can of sweetened condensed milk first, then taste to adjust sweetness by adding more if desired. Stir in 1 teaspoon vanilla extract thoroughly until creamy.
- Serve: Spoon the creamy rice pudding into bowls and enjoy warm or chilled as preferred.
Notes
- Using either Basmati or short grain white rice will yield slightly different textures; short grain typically produces creamier pudding.
- Adjust the sweetness by adding sweetened condensed milk gradually and tasting as you go.
- For a dairy-free version, substitute whole milk with coconut milk and use a vegan sweetened condensed milk alternative.
- Letting the pudding cool and chill in the refrigerator will thicken it further and enhance the flavors.
- Add toppings like cinnamon powder, nuts, or fruit to customize your serving.
