Ingredients

For the Pasta:

  • 10.5 oz dry (300 g) pasta (gluten-free if needed)

For the Sauce:

  • 1 Tbsp olive oil
  • 1 small/medium onion (color of choice)
  • 2 cloves garlic, minced or crushed
  • 1 heaped 1/2 cup (50 g) sun dried tomatoes
  • 1 cup (240 g) hummus (store-bought or homemade)
  • 2 Tbsp fresh lemon juice
  • 1 cup (240 ml) pasta water reserved before draining the pasta
  • 1 cup fresh (30 g) baby spinach
  • 1/2 cup fresh (10 g) basil, chopped
  • Salt, black pepper, chili powder, and cumin to taste

Optional For Serving:

  • Vegan Parmesan Cheese or nutritional yeast flakes


Instructions

  1. Cook the Pasta: Cook the pasta according to the package instructions, usually reducing the cooking time by 1-2 minutes for al dente texture. Drain the pasta and reserve one cup of the pasta cooking water.
  2. Prepare Sun-Dried Tomatoes and Aromatics: Soak the sun-dried tomatoes in hot water for 5-10 minutes to soften, then drain and chop them finely. Peel and finely dice the onion, and mince or crush the garlic cloves.
  3. Sauté Onions: Heat the olive oil in a skillet over medium heat. Add the diced onion and sauté for 3-5 minutes until soft and fragrant.
  4. Add Sun-Dried Tomatoes and Garlic: Stir in the chopped sun-dried tomatoes and cook for a few minutes. Then add the minced garlic and sauté for another minute to release its aroma.
  5. Make the Sauce: Reduce the heat to low. Stir in the hummus, lemon juice, and half a cup of the reserved pasta water to create a creamy sauce.
  6. Add Greens and Seasonings: Mix in the fresh baby spinach, chopped basil, salt, black pepper, chili powder, and cumin according to your taste preferences. Remove the sauce from heat once combined.
  7. Combine Pasta and Sauce: Add the drained pasta to the sauce, stirring well to coat evenly. Add additional pasta water if needed to adjust the sauce to your desired consistency.
  8. Serve: Optionally garnish with vegan Parmesan cheese or nutritional yeast flakes and serve immediately.

Notes

  • Use high-quality hummus: Homemade hummus adds great flavor, but good quality store-bought hummus works well too, as it’s the star of the sauce.
  • Cook pasta al dente: This prevents the pasta from becoming soggy when coated with the sauce.
  • Adjust consistency: Use the reserved pasta water to thin out the sauce to your liking.
  • Season to taste: Since hummus flavors vary, adjust salt, spices, and lemon juice accordingly. Usually ¼ to ½ teaspoon each is recommended.
