Ingredients
Base Ingredients
- ¾ cup yogurt or juice (6.5 oz)
- 4-6 tablespoons honey
- ¼ teaspoon pure vanilla extract
- ½ teaspoon lemon juice
Fruit
- 2 ½ cups fruit (choose from strawberries, blueberries, apples, zucchini, spinach)
Instructions
- Prepare Ingredients: Gather all ingredients including yogurt or juice, your choice of fruit, honey, vanilla extract, and lemon juice.
- Blend the Mixture: Place all ingredients in the order listed into the container of a Vitamix or similar blender. Blend for 50-70 seconds until the mixture is smooth and evenly combined.
- Pour into Molds: Evenly distribute the blended mixture into six wells of a popsicle mold ensuring each well is filled properly.
- Insert Sticks and Freeze: Secure the lids and sticks on top of the molds and place them in the freezer. Freeze for at least 8 hours or overnight to ensure the popsicles solidify completely.
- Release and Serve: To remove the popsicles, run each mold under hot water for about 30 seconds to loosen them, then carefully release the popsicle from the mold.
- Optional Flash Freeze for Storage: If storing for later, place the removed popsicles on a baking sheet and flash freeze for 30 minutes before transferring to an airtight container or freezer bag to maintain their shape and freshness.
- Enjoy: Consume immediately for best texture or store frozen for up to 2-3 months.
- Alternative Method (No Popsicle Mold): Pour the mixture into cups on a baking pan, cover with tin foil, cut a slit in the foil, insert a popsicle stick, and freeze 8 hours or overnight.
