Description
A quick and easy high protein cottage cheese giardiniera dip that combines creamy cottage cheese with the spicy tang of Chicago-style giardiniera. Ready in just 10 minutes, this versatile dip is perfect for snacks, parties, sandwiches, and complements various proteins with a flavorful kick.
Ingredients
Whipped Cottage Cheese
- 1 (16 ounce) container low-fat cottage cheese (e.g., Good Culture)
- 1 garlic clove, sliced or roughly chopped
- 1 small lemon, zested
- ¾ cup Chicago-Style mild or hot giardiniera, drained (do not rinse)
Topping
- Extra ¼ cup Chicago-Style giardiniera with oil (do not drain the oil)
- Optional: Freshly grated Parmesan cheese
- Chopped fresh parsley or green onion for garnish
Instructions
- Prepare the base: In the bowl of a food processor or a high-powered blender, combine the cottage cheese, garlic clove, and lemon zest. Blend on high for 30 seconds to 1 minute, using a blender tamper or a spatula to scrape down the sides as needed to ensure an even, creamy consistency.
- Add giardiniera: Add ¾ cup of drained Chicago-style giardiniera to the whipped cottage cheese mixture. Blend again on high for about 30 seconds until the giardiniera is well incorporated and the dip is smooth and creamy.
- Assemble the dip: Transfer the blended dip to a shallow serving bowl. Top with an additional ¼ cup of giardiniera, including its flavorful oil, to add extra spice and tanginess. Garnish with chopped fresh parsley or green onion and sprinkle with freshly grated Parmesan cheese if desired.
- Serve: Enjoy the dip as a tasty accompaniment with crackers, triscuits, fresh-cut vegetables, or pita chips. It also works wonderfully as a sandwich spread or a dip for quesadillas. Additionally, it pairs deliciously with roasted or grilled chicken, or steak.
Notes
- Do not rinse giardiniera after draining to retain the flavorful oil and spices.
- Use a food processor or high-powered blender for the smoothest, creamiest texture.
- Feel free to adjust the amount and heat level of giardiniera depending on your spice preference.
- This dip is best served fresh but can be refrigerated for up to 3 days in an airtight container.
- Low-fat cottage cheese keeps the dip light while boosting the protein content.
- Optional toppings like Parmesan cheese and fresh herbs add depth and color to the dish.
