Chocolate Coating

Instructions

  1. Prepare the coconut mixture: In a food processor, pulse the shredded coconut, melted coconut oil, maple syrup, and vanilla extract until the mixture becomes sticky and holds together.
  2. Shape the bites: Using your hands or a spoon, form the sticky mixture into small bite-sized balls or discs. Place them on a tray lined with parchment paper and freeze briefly until firm, about 15-20 minutes.
  3. Melt the chocolate: Gently melt the dark chocolate chips in a microwave-safe bowl in short bursts of 15-20 seconds, stirring between each until smooth, or melt over a double boiler on the stove.
  4. Coat the bites: Dip each coconut bite individually into the melted chocolate, coating fully or partially, or drizzle the chocolate over the bites using a spoon. Place the coated bites back on the parchment paper.
  5. Set and store: Refrigerate the chocolate-coated bites until the chocolate hardens, about 30 minutes. Keep refrigerated up to 10 days or freeze up to 2 months for longer storage.
