  • 3 cups cooked shredded chicken breasts (rotisserie or homemade, about 2 lbs uncooked)
  • 1/2 cup Franks Buffalo Wing hot sauce (extra for more spice)
  • 8 oz 1/3 less fat cream cheese, cut into cubes
  • 1 cup 1% milk fat cottage cheese
  • 1 cup shredded part skim Mozzarella cheese
  • 1 cup plain non fat Greek yogurt
  • 1 packet Hidden Valley Ranch seasoning packet
  • 1/2 cup diced green onions
  • 1/2 cup diced celery


Instructions

  1. Prepare the ingredients: Cook and shred about 2 lbs of chicken breasts if not using rotisserie chicken. Dice the green onions and celery. Cube the cream cheese.
  2. Combine ingredients: In your chosen dish (crockpot or baking dish), add shredded chicken, cream cheese cubes, cottage cheese, Greek yogurt, mozzarella cheese, Franks Buffalo Wing hot sauce, green onions, celery, and the ranch seasoning packet. Stir thoroughly to combine all ingredients.
  3. If using crockpot method: Set your crockpot to low heat and cook the mixture for 2-3 hours until the cheeses are melted and the dip is warmed through. Stir occasionally if possible. Optionally top with blue cheese crumbles and additional diced green onions before serving.
  4. If using oven method: Preheat your oven to 350°F (175°C). Spray an 8×8 inch or 2.5-3 quart baking dish with cooking spray. Transfer the mixture to the dish and bake uncovered for about 30 minutes. Check the center to ensure it is hot and the cheeses are melted. Optionally top with blue cheese crumbles and diced green onions before serving.
  5. Serving suggestions: Serve the buffalo chicken dip warm with celery sticks, carrot sticks, cauliflower florets, chips, or crackers for dipping.
