Description

This healthy and easy Chia Seed Jam recipe uses fresh berries, chia seeds, and natural sweeteners to create a nutritious spread. Simmered gently on the stovetop, the berries break down to a luscious consistency before chia seeds thicken the mixture, making a perfect no-mess jam that requires no pectin or added sugar. The addition of lemon juice brightens the flavor, and the jam stays fresh refrigerated for up to two weeks.

Ingredients

Jam Ingredients

  • 3 cups Fresh Berries of choice (e.g. strawberries, blueberries, blackberries)
  • ¼ cup Filtered Water
  • 1 tbsp Maple Syrup (or substitute: agave, coconut sugar, or granulated sugar to taste)
  • 2-3 tbsp Chia Seeds (use 2 tbsp for a softer jam, or 3 tbsp for a thicker consistency)
  • Juice of ½ Lemon

Instructions

  1. Simmer the berries: Add the fresh berries, filtered water, and maple syrup to a nonstick saucepan. Heat over medium until the mixture comes to a boil, then reduce to medium-low and simmer for 10-12 minutes. Stir occasionally and mash some berries to help them break down and release their juices.
  2. Add the chia seeds: Remove the pot from the heat. Stir in the chia seeds thoroughly to distribute them evenly. Let the mixture sit for 5-10 minutes to allow the chia seeds to absorb liquid and thicken the jam.
  3. Finish with lemon juice and store: Stir in the juice of half a lemon to brighten the flavor. Transfer the jam into a clean glass jar and refrigerate. Use as desired within 7-14 days.

Notes

  • This recipe works best with berries due to their high water content, but you can experiment with other fruits at your own discretion.
  • Frozen berries can be used, but you may need to simmer 2-5 minutes longer to reduce excess liquid.
  • Sweeteners can be swapped; agave syrup or coconut sugar are good alternatives. Adjust sweetness to taste.
  • Reducing chia seeds to 2 tablespoons makes for a softer jam, while 3 tablespoons results in a thicker spread after cooling.
