Instructions
- Form the Dough: In a large bowl, whisk together the gluten-free flour blend, almond flour, brown sugar, granulated sugar, baking soda, cinnamon, and salt until evenly combined. Use a pastry knife to cut in the butter until the mixture is evenly incorporated and resembles coarse crumbs. Stir in the honey and gradually add 1 tablespoon of water, mixing until the dough resembles wet sand and can form a ball when pressed or gently kneaded; add up to 1 additional tablespoon of water if needed.
- Make the Crackers: Roll out half of the dough on a well-floured parchment paper to about ⅛-inch thickness. Using a ruler and sharp knife or a square cookie cutter, cut the dough into roughly 2-inch squares. With a floured spatula, carefully transfer the squares to a parchment-lined baking sheet, placing them close enough so edges touch. Poke holes in the tops of the crackers to prevent bubbling. Repeat the process with the remaining dough.
- Chill the Crackers: Place the baking sheet with the cut crackers into the freezer or refrigerator and chill until firm, approximately 10 minutes if using the freezer.
- Bake the Crackers: Preheat the oven to 350°F (177°C). Bake the crackers for 15 minutes. Remove the crackers from the oven and let them cool on the baking sheet. Then, turn the oven off and leave the door slightly ajar for at least 15 minutes to reduce temperature gradually. Next, turn the oven back on to 250°F (121°C).
- Crisp the Crackers: Return the crackers to the oven at 250°F and bake for an additional 25 to 30 minutes. The edges should feel firm and the centers nearly firm to the touch. The crackers will crisp more as they cool.
- Cool and Store: Once fully cooled, gently break the crackers apart along the scored lines. Store in an airtight container for up to one week to maintain freshness.
