Ingredients

Chicken

  • 4 8-oz Boneless skinless chicken breasts
  • 2 tsp Sea salt
  • 1/2 tsp Black pepper
  • 2 tbsp Olive oil (divided)

Sauce

  • 6 cloves Garlic (minced)
  • 1 cup Chicken broth (reduced sodium)
  • 1/2 cup Heavy cream
  • 3 tbsp Grated parmesan cheese (plus more fresh grated for topping if you like)


Instructions

  1. Season the chicken: Pat the chicken breasts dry with paper towels. Season both sides evenly with sea salt and black pepper to ensure flavorful meat.
  2. Sear the chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat until shimmering. Add the chicken breasts and cook for 4 to 8 minutes on each side, until golden brown and nearly cooked through. Aim for an internal temperature of 155-160°F (68-71°C). Remove the chicken from the skillet and cover to keep warm.
  3. Sauté the garlic: Add the remaining tablespoon of olive oil to the skillet. Add the minced garlic and sauté for about 1 minute until fragrant but not burnt.
  4. Deglaze with broth and cream: Pour in the chicken broth and heavy cream. Use a wooden spoon to scrape up the browned bits from the bottom of the skillet. Let the mixture simmer for about 5 minutes, reducing by half and thickening slightly to coat the back of a spoon.
  5. Add Parmesan cheese: Reduce heat to low and gradually whisk in the grated Parmesan cheese until melted and smooth. Taste and adjust seasoning with salt and pepper if needed.
  6. Finish cooking chicken: Return the chicken breasts to the skillet and spoon the sauce over them. Let them cook for an additional 2 to 3 minutes to heat through and ensure the chicken is fully cooked.

  • Use an instant-read thermometer to check chicken doneness; target 160°F for safe and juicy meat.
  • For a thicker sauce, let it simmer longer to reduce further before adding Parmesan.
