Description
Fruity Pebbles Rice Krispies Treats are a colorful and delicious twist on the classic rice cereal bars. These chewy and sweet treats combine the nostalgic crunch of Rice Krispies with the vibrant, fruity flavors of Fruity Pebbles cereal, all held together by a rich marshmallow and butter mixture. Perfect for a fun snack or a festive dessert, they are easy to make and delightfully addictive.
Ingredients
Butter and Marshmallow Mixture
- 5 tablespoons unsalted butter
- 16 ounces miniature marshmallows (see note 1)
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Cereals
- 4 cups Fruity Pebbles cereal
- 2 cups Rice Krispies cereal (see note 2)
Instructions
- Prepare the Pan: Spray a 9 x 9-inch pan with cooking spray and line it with parchment paper, leaving an overhang on the sides to easily lift the treats out later.
- Reserve Marshmallows: Separate 2-1/2 cups (120 grams) of marshmallows from the bag and set aside for later use.
- Melt Butter and Marshmallows: In a large nonstick pot, melt the butter over low heat. Once melted, add all but the reserved marshmallows. Stir constantly over low heat until the marshmallows are fully melted and smooth.
- Add Flavorings: Remove the pot from heat and stir in the salt and vanilla extract to enhance flavor.
- Mix in Cereals and Reserved Marshmallows: Gently fold in the Rice Krispies and Fruity Pebbles cereals. Then add the reserved marshmallows and continue stirring carefully, ensuring everything is combined without crushing the cereal.
- Transfer and Press: Pour the mixture into the prepared pan. Lightly spray your hands with cooking spray and gently press the mixture evenly into the pan. Avoid pressing too hard to keep the treats light and chewy.
- Cool and Cut: Let the bars cool and set for at least one hour. Using the parchment paper overhang, lift the bars out of the pan and cut them into squares with a sharp knife.
Notes
- The softer and fresher the marshmallows, the better the texture and taste of the bars.
- You can substitute the combined cereals with all Fruity Pebbles, but the bars may turn out sweeter.
- For the best texture, enjoy these treats the same day. Store leftovers tightly wrapped at room temperature for up to 2 days.
