Description
French Onion Butter Beans is a rich and comforting vegetarian dish featuring slow-caramelized onions cooked with garlic, rosemary, and balsamic vinegar, combined with tender butter beans in a creamy, flavorful sauce. Perfect as a hearty side or a warming main course.
Ingredients
For the Onion Base
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 large white onion, diced
- 2 garlic cloves, minced
For the Sauce
- 1 tablespoon plain flour
- 1 teaspoon dried or fresh rosemary, diced
- 1 tablespoon balsamic vinegar
- 570 g jarred butter beans, drained
- 250 ml vegetable or mushroom stock
- 150 ml heavy cream or crème fraîche
- Salt and pepper, to taste
Instructions
- Caramelize Onions: Heat the olive oil and butter in a large pan over low heat. Add the diced onion and cook slowly for at least 30 minutes, ideally 45 minutes or more, stirring often to avoid burning and to develop a golden brown, jammy texture.
- Add Garlic: Once onions are caramelized, add the minced garlic and cook for 1-2 minutes until fragrant.
- Incorporate Flour and Rosemary: Stir in the plain flour and diced rosemary, cooking for another 1-2 minutes to cook off the raw flour taste and blend the flavors.
- Add Balsamic Vinegar: Pour in the balsamic vinegar, stirring to deglaze the pan and loosen any browned bits stuck to the bottom.
- Add Butter Beans and Stock: Add the drained butter beans and vegetable or mushroom stock, stir well. Let the mixture simmer gently for 10 minutes, allowing the sauce to thicken and develop a medium caramel-brown color. Season with salt and pepper to taste.
- Finish with Cream: Pour in the heavy cream or crème fraîche and continue to simmer for 5 minutes to fully integrate the creamy texture and flavors.
Notes
- Caramelizing onions slowly is key to developing deep flavor; avoid rushing this step by cooking on low heat.
- You can prepare caramelized onions ahead of time and refrigerate or freeze for convenience.
- If you prefer, substitute crème fraîche for heavy cream for a tangier, richer taste.
- Ensure the butter beans are well drained to prevent the dish from becoming too watery.
- This dish works well served over toasted bread, rice, or as a side to roasted meats or grilled vegetables.
