Ingredients
Cheese Mixture
- 8 ounces softened cream cheese
- 1/4 cup mayonnaise
- 1 clove garlic, peeled and finely grated or minced
- 1 cup freshly grated mozzarella cheese, divided
- 5 tablespoons freshly grated asiago cheese, divided
- 5 tablespoons freshly grated parmesan cheese, divided
- 5 tablespoons pecorino Romano cheese, divided
Vegetables & Seasonings
- 9 ounces frozen spinach, defrosted and excess water squeezed out
- 1 cup chopped artichoke hearts, canned, rinsed and drained
- 1/2 teaspoon dried basil
- 1 pinch kosher salt
- Freshly ground black pepper, to taste

- Olive oil spray or butter for greasing the baking dish
Instructions
- Prepare Spinach and Artichokes: Defrost the frozen spinach completely and squeeze out as much water as possible using your hands and then wrap in a kitchen towel to wring out remaining moisture. Drain the canned artichoke hearts and chop into quarters or smaller pieces if large. Rinse if packed in brine and drain thoroughly.
- Preheat Oven and Prepare Baking Dish: Preheat your oven to 350℉ (180℃). Lightly grease a 10-inch cast iron skillet or a deep-sided pie dish with olive oil spray or butter and set aside.
- Mix Cream Cheese Base: In a medium bowl, combine the softened cream cheese, mayonnaise, and grated garlic until smooth.
- Set Aside Cheese Topping: In a separate bowl, mix 1/2 cup of mozzarella with 1 tablespoon each of asiago, parmesan, and pecorino Romano cheeses. This reserved cheese blend will be used as topping.
- Combine Remaining Ingredients: Add the remaining mozzarella, asiago, parmesan, and pecorino Romano cheeses to the cream cheese mixture. Stir in the chopped artichokes, spinach, dried basil, kosher salt, and freshly ground black pepper. Mix well until everything is evenly incorporated.
- Assemble the Dip: Transfer the combined mixture to the prepared baking dish, spreading evenly. Sprinkle the reserved four cheese blend evenly over the top.
- Bake: Bake in the center rack of the preheated oven for 30 to 35 minutes, or until the dip is bubbly and the top is golden brown.
- Serve: Remove from oven and let cool slightly before serving. Perfect with corn tortilla chips, baked pita chips, or pumpernickel bread.
