Instructions

  1. Separate the eggs: Carefully separate the egg yolks from the whites, placing the whites into a large metal mixing bowl and keeping the yolks in their shells or in individual small bowls to prevent breaking.
  2. Whip the egg whites: Using a mixer or whisk, beat the egg whites until stiff peaks form, indicating the whites are fully aerated and hold their shape firmly.
  3. Fold in cheese and chives: Gently fold the shredded Parmesan cheese and chopped chives into the whipped egg whites, taking care not to deflate the mixture to maintain its light texture.
  4. Prepare baking sheet: Line a baking sheet with parchment paper. Spoon the whipped egg white mixture into four separate mounds on the sheet, shaping each mound evenly.
  5. Create yolk wells: Use the back of a spoon to carefully make a deep well in the center of each egg white mound, creating a nest to hold the yolks later.
