Ingredients
Chicken
- 1.5 lbs boneless skinless chicken breasts or thighs
- 1 tsp salt
- ½ tsp black pepper
- ¼ cup all-purpose flour (optional)
- 1 tbsp olive oil
Sauce & Seasoning
- 3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- ⅓ cup fresh lemon juice (about 2 lemons)
- 1 lemon, thinly sliced
- 3 tbsp capers, drained
- 1 tsp Italian seasoning or 1 tbsp chopped fresh parsley
- 2 tbsp butter
Serving
- Cooked pasta or mashed potatoes, for serving
Instructions
- Season the Chicken: Pat the chicken breasts or thighs dry and season them evenly with salt and black pepper. If desired, lightly coat each piece with all-purpose flour to help create a slight crust and thicken the sauce later.
- Sear the Chicken: Heat the olive oil in a skillet over medium-high heat. Sear the chicken for 2 to 3 minutes on each side until golden brown. This step seals in juices and adds flavor. Then transfer the seared chicken to the crockpot.
- Add Sauce Ingredients: In the crockpot, add minced garlic, drained capers, thin lemon slices, fresh lemon juice, low-sodium chicken broth, and Italian seasoning or fresh parsley. These ingredients will infuse the chicken with bright, zesty flavors.
- Slow Cook: Cover the crockpot and cook on LOW for 4 to 5 hours or on HIGH for 2 to 2.5 hours, until the chicken is fully cooked and tender.
- Finish the Sauce: Remove the cooked chicken from the crockpot. Stir the butter into the sauce inside the crockpot to enrich and slightly thicken it.
- Serve: Return the chicken to the crockpot to coat with the sauce or plate the chicken and spoon the sauce over the top. Garnish with additional parsley if desired. Serve alongside cooked pasta, rice, or mashed potatoes for a complete meal.

- Use chicken thighs instead of breasts for juicier, more flavorful results.
- Add fresh spinach or artichokes in the last 30 minutes of cooking for extra vegetables.
